Made this lastnight. Pretty good for ya if you just get sick of the same old deep fried smelt. I'm gonna stock up on these little fish this winter for sure. Think I enjoy them more than walleye now. Plus it's one fish the whole family will eat.
Easy Baked Parmesan Smelt Recipe Serves/Makes: 6 - 8 Ingredients:
•3 pounds smelt, cleaned •1/4 cup freshly grated Parmesan cheese •1/2 cup milk •1/2 teaspoon salt •1/3 cup melted butter •1 1/2 cup flavored bread crumbs •Paprika How to cook Easy Baked Parmesan Smelt: 1.Wash and dry smelt. 2.Combine milk and salt. Combine bread crumbs and cheese. 3.Dip smelt in milk, roll in crumbs. 4.Place smelt in a single layer in well greased 15"x10"x1" baking dish pour butter over fish and sprinkle liberally with paprika. 5.Bake in 500°F oven 8-10 minutes.
you can cut it down, no need to make 3 pounds.

im gonna have to go to the smelt gathering this year ive never eaten one and i hear they are tasty little bugggers

I can't believe you still had smelt left. I cooked em for me and a buddy and then a couple others came over and they were gone. I only had 50 some though. I'm addicted to catching those minnows after just one time. I will be trying this recipe and probably coming up with one or two myself. COME ON ICE!

I had a buddy who fished the last 2 or 3 weeks of ice on higgins every day. He gave me quite a few, have one batch of about 50 left.

About 10 years ago I lived on Duck Lake in Grawn. I was single and didn't have lots of money for groceries. I ate so many darn smelt that winter that if I don't ever eat another one, I'm okay with that. But, it has been 10 years since I've had one to eat, and after reading that recipe, wouldn't mind trying them again.
