My wife was watching a cooking show today and they were talking about fish cheeks. I've heard of cutting out fish cheeks before but I've never done it. What freshwater species have cheeks big enough to be worth the effort? And once you have them, do you just fry them up with the rest of the fillets or do you make something special with them?

People keep walleye cheeks, but I've never bothered with them.

walleye have decent cheeks but only if you get good sized ones.... bass have shallow ones but no one eats bass..... i dunno if pike do or not i dont think so maybe shallow ones

Spent a lot of time on salmon boats out of Ludington and never knew anyone to take cheeks from them.

Walleye cheeks are awesome,have the consistency of chicken.I used to save them and have a surf and turf dinner with venison tenderloins...

Back when I used to catch walleye, we kept the cheeks. They are great cooked up for an apetizer or incorporate them into a chowder, gumbo or soup. Never tried any other species.

Skully knows about them because back in the day he had Moses part the sea for him so he could grab the big walleye flopping on the bottom. ;D

Salmon cheeks are AWESOME...same for walleye and Pike...even bass...It's more like a scallop than regular fish meat....I save them up, and have a big fry when i get enough...
Also, sounds kinda weird...but grilled salmon heads are pretty big in japan...Might have to try it sometime

Walleye cheeks are the best appetizer in the world. I do like JD and just save them up till I have a bag full. i agree they are more like a scallop then a piece of fish. And if you've never tried it the best part on a fish is the wings, google it, hard to explain.
