Here is the basics of how I saw it done.
You dig a big hole in the ground and he poured sand in to cover the soil. Put a bunch of rocks on the bottom of the hole and then split wood etc to start a fire like any other. Add split wood until you have a good fire/ coals going and then add more large rocks on top. Wrap the hog in wet towels and or sheets and then a lot of aluminum foil so no sand or dirt gets on the meat. You would already have another big fire going on ground nearby. Place prepared hog on the rocks in the hole. Now add large hot rocks from the other fire along with coals on top of hog. Now fill in the hole. Now place large rocks on top of what was the hole and move wood from above ground fire on to these rocks. Keep that fire going for what seemed like 8-10 hours. Then dig it out. I only saw it done once, I'm sure swamp has a better explaination, but this will give you the idea.

Basically like that..we never used rocks though..they do it that way a lot of places though. we basically dig about a 4ft hole for the hog, burn wood in it for quite a while..you want a big hot bed of coals. prepare you hog and seasoning him up as u wish,,lots of onions, tators, apples and such to stuff him with. You can use wet towels if you want..i have done it with and with out them works about the same..wrap in foil and then we wrap 2 heavy peices of wire one on each end to lower the hog into the coals(and pull him out easier).Now this is where you would have had another fire going too so you can cover the hog on top..you can cook it anythere between 8-24 hours..depends what you want..also a few times we stuffed the hog with a deer quarter and it was delicous! we should have a Backbone camping weekend and do this this summer.

Oh and also while preparing the hog take a propane torch and singe the hair all over and burn it off!
